Number Of Ingredients 6

1/2 cup Butter (softened)
2/3 cup Sugar
3 Eggs
1-3/4 to 2 cup Unbleached all-purpose flour
1 teaspoon Baking Powder
1 teaspoon Vanilla Extract

Steps:

  • Beat butter and sugar until smooth
  • Mix in eggs one at a time
  • Add vanilla
  • Combine flour, baking powder and salt in a separate bowl
  • Add flour mixture to egg mixture. Dough will be sticky and soft.
  • Add a rounded teaspon of dough to hot pizzelle iron that has been lightly sprayed with oil and cook for about 3 minutes. (Timing is trial and error.)
  • Remove cooked pizzelles with a fork and place on cooling rack
  • Cookies hold for a long time, but will lose their crispness if stored in an airtight container.
