PINEAPPLE VINEGAR (DAISY) image

Number Of Ingredients 8

2 ripe pineapples
1/2 large onion, thinly sliced
1 T smashed fresh oregano leaves
1 t black peppercorns
20 garlic cloves, crushed
6 habanero or other chili peppers, coarsely chopped
1 T cider vinegar, or as needed
1/2 t salt, as needed

Steps:

  • Cut tops of pineapples. Cut off rind from pineapple. Put rinds in a large pot and cover with water. Boil until peel is tender, about 30 min. Add water as necessary. Put remaining ingredients in a jar with a tight-fitting lid. Strain pineapple liquid over seasonings. If not enough liquid, add water and boil again 20 minutes. Taste & add salt & vinegar. Keep at room temp 1 day, then refrigerate.
