PINEAPPLE RUM TOFFEE SAUCE image

Yield 2 cups

Number Of Ingredients 6

1 cup diced fresh pineapple
¾ cup light brown sugar
6 T. heavy cream
8 T. (1/2 stick) butter
½ tsp. vanilla
3 T. dark rum

Steps:

  • Combine the pineapple, sugar, cream, butter, vanilla and rum in a heavy saucepan and boil for 3 minutes. Transfer the sauce to sterile jars, cover and let cool. Store the sauce in the refrigerator until ready to use. Warm in a saucepan before serving.
