Pineapple Casserole II image

This tastes similar to Sicilian cheese pies.

2 (20 ounce) cans pineapple chunks, juice reserved
1 cup white sugar
3 tablespoons all-purpose flour
ΒΌ pound butter, melted
2 cups shredded Cheddar cheese
25 buttery round crackers, crumbled

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter or grease one 2 quart casserole dish.
  • In a mixing bowl, blend together 4 tablespoons reserved pineapple juice, sugar, flour and butter.
  • Add pineapple and cheese; mix well and pour into casserole dish. Bake for 20 minutes.
  • Reduce oven temperature to 300 degrees F (150 degrees C), sprinkle top with cracker crumbs and bake for 20 more minutes.
