1 whole wheat baguette, sliced and toasted
8 ounces thin sliced chicken cutlets
1/8 teaspoon kosher salt
1/4 teaspoon black pepper, to taste
1 cup diced onion
1 cup diced green pepper
1/4 cup light mayonnaise
1/2 cup light sour cream
4 ounces light cream cheese, softened
4 ounces shredded mild provolone cheese

Steps:

  • Season chicken with salt and pepper on both side. Spray a grill pan or large skillet with cooking spray and cook on high heat about 1 minute on each side, until cooked through. Set aside and slice thin,.
  • Spray with more oil and saute onions and peppers over medium-low heat for 5 to 6 minutes, until soft.
  • Preheat oven to 350°F.
  • Combine all the ingredients in a medium bowl. Place in an oven-proof dish and bake 20-25 minutes, until hot and cheese is melted.
