Pesto Chicken Penne image

You can use white mushrooms if you prefer. You can use either homemade or jarred pesto sauce.

2 chicken breasts, boneless and skinless
16 oz penne pasta, uncooked
1 c chopped fresh spinach
8 oz fresh crimini mushrooms, sliced
2 medium roma tomatoes, diced
1 c basil pesto sauce
1 c feta cheese crumbles
3 slice bacon, cooked crisp and crumbled
2 Tbsp olive oil, divided

Steps:

  • 1. Heat 1 Tbsp. oil in skillet. Add spinach, tomatoes and mushrooms. Saute stirring frequently for 5 minutes. Set aside.
  • 2. Cut chicken into strips.
  • 3. Heat another Tbsp oil in skillet. Add chicken strips and cook until chicken is done.
  • 4. Add pesto to chicken and saute another 3 minutes. Set aside.
  • 5. Cook penne according to package directions. Drain.
  • 6. Place chicken and vegetables in a bowl. Add pesto and toss to coat, mixing chicken and veggies as you do so.
  • 7. Sprinkle with feta cheese and bacon crumbles.
