This is a Southern classic. It's great as a side dish or a dessert. I served it as a side dish to go with our baked ham, but it would be great as a dessert too. I'll certainly remember this recipe for pot-luck parties. It's too good to pass up!

Steps:
- 1. Preheat oven to 350°F. Coat an 8-inch square baking dish with cooking spray; set aside.
- 2. In a medium saucepan over medium-high heat, whisk together gelatin mix, sugar, cornstarch, and water until mixture is smooth. Bring mixture to a boil and continue to whisk until thickened. Stir in pineapple tidbits and cheese. Pour mixture into baking dish.
- 3. In a medium mixing bowl, combine cracker crumbs and melted butter. Sprinkle buttered crumbs over the pineapple mixture.
- 4. Bake at 350° for 30 to 35 minutes, or until golden brown and thoroughly heated throughout.
