I adapted this from a similar recipe I found. It's always a huge hit in my family, especially during the cold winter season. It's easy to prepare and enjoyable to experiment with. Number Of Ingredients 8

1 3-5 pound boneless beef roast, trimmed
1 can(s) pepsi
1 can(s) cream of mushroom soup, undiluted
1 pouch dry onion soup mix
1 clove garlic, minced (optional)
3 or 4 medium carrots, cut into chunks
3 or 4 small potatoes, peeled and cut into chunks
salt and pepper to taste

Steps:

  • 1. Preheat oven to 350 degrees F. Line a 3-quart casserole dish with foil. Use pieces which are long enough to cover the food.
  • 2. Place roast in the middle. Pour Pepsi over the top. Spoon cream of mushroom soup over this. Sprinkle with onion soup mix and garlic clove.
  • 3. Surround the roast evenly with the vegetables. Sprinkle salt and pepper over all. Cover tightly with foil. Bake in preheated oven for three (3) hours.
