Peppercorn Crusted Pork Loin image

I have always loved this recipe. It isn't that hard to make just a little messy. This is great for a crowd. Hope you enjoy!

Number Of Ingredients 8

4 pound(s) pork loin
1/2 teaspoon(s) kosher salt
1/4 cup(s) dijon mustard
2 tablespoon(s) buttermilk
2 cup(s) fresh whole wheat breadcrumbs
2 tablespoon(s) cracked black peppercorn
2 teaspoon(s) assorted peppercorn, crushed
2 teaspoon(s) fresh thyme, chopped

Steps:

  • Preheat oven to 325.
  • Sprinkle roast with salt. Combine mustard & buttermilk, spread over all sides of roast. Combine fresh breadcrumbs in a bowl with remaining ingredients. Press evenly over entire roast. This will be messy, I do this on a large piece of wax paper.
  • Place roast on a lightly greased rack over roasting pan. Bake at 325 for till reach 145 degrees about 75 minutes.. Let stand for at least 10 minutes, do not tent with aluminum will make crust moist. Enjoy!
