PENNE WITH CHICKEN, SPINACH, & GORGONZOLA image

Number Of Ingredients 10

1 chicken breast (grilled or cooked & cut into bite sized pieces)
12 Tbsp. unsalted butter
3 cloves minced garlic
3 ounces Gorgonzola Dolce, crumbled
1 lb. fresh spinach, rinsed, stemmed and torn into pieces
1 (2.5 oz) can sliced black olives, drained
1 cup sun-dried tomatoes packed in oil, drained & julienned
12 oz. Penne pasta - cooked
1 ΒΌ cups heavy cream
Parmesan to garnish

Steps:

  • Melt butter in large skillet. Add garlic and saute 1 minute. Stir in gorgonzola and cook until it melts. Add spinach and cook until it has wilted. Stir in olives and sun dried tomatoes, then the cooked penne and the cooked chicken. Stir in cream and cook over medium heat until sauce begins to bubble, about 5 minutes. Serve immediately, garnished with Parmesan.
