Number Of Ingredients 9

1 3/4 cups flour
1/2 cup yellow cornmeal
1 1/4 tsp baking powder
1/4 tsp salt
1 cup finely chopped pecans, toasted
2 lg eggs, lightly beaten
3/4 cup sugar
1/2 cup vegt oil
1/4 tsp almond or vanilla extract

Steps:

  • combine 1st 5 ingred in lg bowl - stir eggs & next 3 ingred; gradually add to flour mix, stirring until moist - divide dough in half - shape ea portion into 12 x 2" log - place 3 " apart on greased baking sheet - bake @ 350 x 25 mins - cool 10 mins - cut diagonally into 3/4" slices with serrated knife - bake @ 350 x 7 mins - turn over & bake 7 more mins - cool on wire racke
