PEAR AND CURRANT CHUTNEY image

Number Of Ingredients 8

1 cup dried currants
6 tbsp pear brandy
4 bosc pears,cored and cut into 1/4"
2 ribs celery cut into 1/4" pieces
1/2 cup sugar
1/3-1/2 cup fresh lemon juice
3"-3 1/2 piece ginger,peeled,grated
Pinch cayenne

Steps:

  • Currants & brandy into saucepan,simmer about 7 min.Add pears,celery,sugar,lemon j,ginger,cayenne stir well.Reduce heat to simmer until pears are very soft,translucent&juices thick and syrupy,about 1 hr.Put in jar cool, cover-into fridge.
