BISCOTTI CIOCCOLATO image

Yield 30-40 cookies

Number Of Ingredients 11

1 cup whole almonds
1 3/4 cups flour
1/3 cup unsweetened cocoa
1 tsp. baking soda
1/4 tsp. salt
2 tbsp. instant coffee
2/3 cup bittersweet or semisweet chocolate
3 large eggs
1 tsp. vanilla extract
1/2 tsp. almond extract (optional)
1 cup sugar

Steps:

  • 1. Preheat oven to 350. 2. Toast almonds in shallow pan 12 minutes. 3. Reduce oven heat to 300. 4. Line cookie sheets with aluminum foil shiny side up. 5. Stir together flour, cocoa, baking soda, salt, and coffee. 6. Grind chocolate until very fine. 7. In mixer, beat eggs, vanilla, and almond extract until mixed. Slowly add chocolate, sugar, and flour mixture. 8. Stir in almonds. 9. On floured surface, shape dough into log. 10. Bake for 50 minutes. 11. Cool for 10 minutes, then slice on sharp diagonal with serrated knife. 12. Place on cookie sheet and bake 40 minutes. Turn after 15-20 minutes.
