Beef
3 Medium Sized Dry Fish
1 Cup of Grounded Egusi (Melon Seeds)
1 Cup Dry Pawpaw Flakes
2 Cooking Spoons of Palm Oil
5 Medium Chilli Peppers
4 Knorr Seasoning Cubes
Salt to Taste
1 Teaspoon Locust Beans

Steps:

  • Cut and wash the beef, put in a pot, add water, 1 cube of knorr seasoning, salt and some sliced onions. Bring to the boil for 25 mins. Soak dry pawpaw flakes in a bowl of cold water to rise. Soak dry fish in a bowl of boiled water to clean. In another bowl, make a thick paste with the egusi and leave to rise. After 3 mins, drain the hot water from the dry fish and wash thoroughly, removing the bones without breaking the fish. When the beef is tender, remove from the fire and leave to cool a bit. In another pot, mix some water, beef, beef stock, palm oil, grounded fresh chilli pepper, knorr seasoning, salt and locust beans. Bring to the boil. After 10 mins, add egusi paste to the pot and cove again without stirring. Leave for another 10 mins and add the dry fish. After 5 mins, stir gently. The last to be added but not the least is the pawpaw flakes, cover and allow to simmer for 15 mins. Serve hot with Pounded Yam, Semovita, Eba of Fufu.
