MY OLDEST DAUGHTER SAID THIS IS THE BEST MAC & CHEESE SHE HAS EVER EATEN. SHE HAD ME LOOK UP THE RECIPE SO I AM GONNA SHARE IT WITH ALL YA'LL.

1 Tbsp vegetable oil
1 lb macaroni, elbow
1/2 c plus 1 tablespoon butter
1/2 c each-mild cheddar, sharp cheddar, munster, monterey jack cheese shredded
2 c half and half
1 c velvetta cheese, cut into small cubes
2 lg eggs, lightly beaten
1/4 tsp salt
1/8 tsp pepper

Steps:

  • 1. PREHEAT OVEN TO 350F. SPRAY A 2-QT CASSEROLE DISH. PREPARE MACARONI ACCORDING TO PACKAGE DIRECTIONS. DO NOT OVERCOOK.
  • 2. IN A SMALL SAUCE PAN, MELT THE 1/2 CUP OF BUTTER. STIR INTO COOKED MACARONI(ONCE YOU HAVE DRAINED THE MACARONI PUT IT BACK IN THE POT).
  • 3. IN A LARGE BOWL MIX ALL THE CHEESES EXCEPT THE VELVETTA.
  • 4. TO THE MACARONI ADD THE HALF & HALF, 1 1/2 CUPS OF CHEESE AND THE CUBBED VELVETTA AND THEM THE EGGS. SEASON WITH SALT & PEPPER.
  • 5. TRANSFER TO THE CASSEROLE DISH. SPRINKLE WITH REMAINING CHEESE AND DOT WITH BUTTER. BAKE FOR 35 MINUTES.
