PASTA WITH MARINATED TOMATOES AND LOBSTER image

1/2 c. EVOO
5 cloves garlic, thinly sliced
1/4 tsp crushed red pepper
1 lb. cooked lobster
1 1/2 lb. red and gold cherry tomatoes halved or quartered
3 Tbsp capers
3/4 c. torn fresh basil
Salt
1 lb short tubed pasta
1/2 c. mascarpone cheese
1/4 tsp pepper

Steps:

  • Cook oil garlic and red pepper flakes over low heat until garlic browns. Place lobster, tomatoes, capers, 1/2 c. basil and salt in bowl, stir in garlic mixture Cover and refridgerate 2 hours tossing occasionally Cook pasta in slated water. Drain reserving some liquid. Mix mascarpone and pepper in small bowl. Addd pasta to lobster mixture, stir in remaining basil and serve with cheese on the side.
