Steps:
- pancetta in olive oil til begins to render add garlic, red pepper flakes & salt&pepper (I then deglazed with white wine"cause I didn't like how it was smelling) Add tomatoes and cook at high-ish 'til they burst and curl skins Add undercooked pasta to pan at high and cook a little more Toss in 3 tbs butter , torn mint&/or basil leaves and scallions Pass ricotta to dollop on top as desired
