PASTA C BURST CHERRY TOMATOES image

Yield 4 to 6 persons

Number Of Ingredients 11

fusilli pasta
Olive oil
6oz pancetta
6 smashed garlic cloves
pinch red pepper flakes
sea salt & pepper
qt cherry tomatoes halved
3 tbsp butter
ricotta cheese
3 cups torn mint leaves
4 scallions

Steps:

  • pancetta in olive oil til begins to render add garlic, red pepper flakes & salt&pepper (I then deglazed with white wine"cause I didn't like how it was smelling) Add tomatoes and cook at high-ish 'til they burst and curl skins Add undercooked pasta to pan at high and cook a little more Toss in 3 tbs butter , torn mint&/or basil leaves and scallions Pass ricotta to dollop on top as desired
