Parmesan Risotto image

This is a super easy recipe and very tasty. My family loved it with Bang Bang Salmon. You could even add broccoli or mushrooms.

Number Of Ingredients 5

1 tablespoon(s) butter
1 tablespoon(s) olive oil, light
3/4 cup(s) aboria rice
2 cup(s) chicken broth low sodium
3\4 cup(s) parmesan cheese, shredded

Steps:

  • Heat oil and butter until melted over medium heat. Add rice and completely cover and cook until translucent, about 2 minutes.
  • Heat chicken broth. Add about a cup to rice. Stir constantly stirring until broth is gone, then add remaining cup and do the same.
  • Once all liquid is gone, turn off heat and add Parmesan. Stir and serve.
