PARMESAN BUTTERNUT SQUASH image

Number Of Ingredients 4

2 1/2 lbs of butternut squash, peeled and cut in to 1" pieces (I precooked in the microwave)
3/4 cup heavy cream
3 sage leaves
2/3 cup grated parmigiano-reggiano

Steps:

  • Preheat oven to 400 Toss cubed squash with cream, sage, 1/3 c cheese, 1 tsp salt, 1/4 tsp pepper in a 2 quart shallow baking dish. Bake covered 30 minutes. Remove cover and sprinkle additional 1/3 c cheese over top. Roast uncovered an additional 20 minutes until browned. Let stand 5 minutes before serving.
