Paella Foil Pack over grill image

Cooking from my roots. Paella is something people are afraid to try but in fact it's quite easy. You throw all the ingredients together and the end result is a meld of flavors and textures that leave you satisfied.

1 c uncooked spanish rice
1 1/4 c chicken broth
6 peeled large shrimp
2 skinless chicken thighs
2 oz sliced dried chorizo
1/4 c roasted red peppers, cut into strips
1/4 c pimento olives
1/2 tsp smoked paprika

Steps:

  • 1. Combine 1 cup uncooked Spanish rice mix, 1 1/4 cups chicken broth, 6 peeled large shrimp, 2 skinless chicken thighs, 2 ounces sliced dried chorizo, 1/4 cup each pimiento-stuffed olives and roasted pepper strips, and 1/2 teaspoon smoked paprika.
  • 2. Mix together and pour into a disposable pie pan. Drizzle with olive oil, salt & pepper to taste. Seal the pan in foil.
  • 3. Grill over medium-high heat, 30 minutes.
