Oven Roasted Cherry Tomatoes w/ Basil & White Fish image

Number Of Ingredients 6

2 pint(s) cherry tomatoes
1 tablespoon(s) olive oil, extra virgin
12 to 15 clove(s) garlic
- coarse salt
1/2 cup(s) fresh basil leaves, packed and torn
1 1/4 pound(s) whitefish of your choice

Steps:

  • Heat oven to 425°F.
  • In a 9" x 13" pan, combine 1/2 of the tomatoes, oil, garlic, salt, pepper and half of the basil leaves. Roast for 15 minutes. Remove from oven. Gently stir.
  • Place fish on top of tomatoes. Do not overlap. Place remaining tomatoes on top. Place back in the oven for 7 to 10 minutes.
  • Remove from oven and remaining basil.
