OVEN BEEF STEW WITH RED WINE image

Number Of Ingredients 11

2 lbs beef round or chuck cut in 1 inch cubes
4 carrots chopped
4 baking potatoes peeled + chopped
16 pearl onions peeled
2 cloves garlic minced
bouquet garni; 2 sprigs parsley, 2 sprigs fresh thyme, 1 bay leaf, 2 juniper berries, wrapped in cheesecloth
2 cups dry red wine
1 can 14.5 oz beef broth
1 Tblsp tomato paste
1 tsp salt
1 cup frozen green peas

Steps:

  • Heat oven to 300. Place all ingredients except peas in ovenproof casserole with tight lid. Heat beef mixture to boil over high heat, cover + put in oven.Cook, checking that liquid still covers ingredients till beef is tender (2 1/2-3 hrs)Add the peas 10 min before serving. Remove a few of the potatoes + mash, then stir back into stew to thicken it. Serve in lg bowls.
