4 red onions, peeled and sliced
1/4 cup chicken broth
1/4 cup madeira wine
salt and pepper

Steps:

  • Place the onions in a non stick frying pan. Add the stock and wine.
  • Simmer gently, uncovered, until the liquid is almost gone.
  • Season to taste with salt and pepper.
