One Layer White Cake image

4 Tbsp butter softened
1/2 c sugar
1 egg
1/2 tsp pure vanilla extract
1 c self rising flour
1/3+1/6 c milk
2 oz cream cheese softened
1 c powdered sugar
1/4 tsp vanilla extract
1-2 tsp milk

Steps:

  • 1. Preheat oven to 350 degrees. Grease and flour or spray with flour your pan, or use muffin liners in muffin tin.
  • 2. Cream butter and sugar well, add egg, mix to combine, add vanilla, blend well. Add flour and milk alternately, begin and end with flour.
  • 3. Put into prepared pan of choice. Bake at 350% for approx time depending on pan you use. Muffins take about 10-15 minutes, depending how much batter in each cup. Single layer cake approx 20-25 minutes.
  • 4. While cake is baking, mix the frosting, cream the cream cheese well, add powdered sugar, small amounts at a time, to blend well, add vanilla and just enough milk for the spreading consistency desired. Cool cake completely before frosting.
  • 5. This cake can also be used unfrosted as a short cake for fruit, ice cream, whipped topping, etc...makes wonderful strawberry or peach shortcake desserts.
