OLIVE OIL MATZO image

Number Of Ingredients 5

2 C bread flour
1/2 tsp salt
1/3 C olive oil
Sea salt (optional)
1/2 C water

Steps:

  • 1. Heat oven to 500 degrees. 2. Put flour, salt and olive oil in a food processor. Once machine is on, add water. Continue to run machine until dough forms a firm ball, rides around blade and is not at all sticky. (Or, whisk the oil and water together and then add to the machine all at once. 3. Cut the dough into 12 small balls ... easiest if you cut the ball in half, then half again, then into thirds ... and flatten each into 3 to 4 inch patty. On a well-floured surface, roll each patty into a 6-to-8 inch circle. The shapes can be irregular, but the should be so thin you can almost see through it. 4. Put the dough circles onto ungreased cookie sheets, sprinkle with sea salt, and bake for about 2 to 3 minutes, keeping a close eye on them ... they can burn very quickly. Once they begin to p;uff up and brown, flip and bake for another minute or so on the second side. Repeat with all the dough and let cool completely.
