Old Fashioned Fried Zucchini Strips image

My mom used to make fried zucchini and I think my grandma (her mom) did too out of all of those great fresh garden picks in Pennsylvania. I love this flavor but wanted to make it my way, with a dipping sauce.

2 -3 medium zucchini, ends trimmed, cut in half and sliced lengthwise in 3-inch long by 1/4 inch thick strips
1/2 cup flour
1/2 cup cornmeal
2 eggs, beaten
1 tablespoon salt
1 teaspoon black pepper
1 teaspoon italian seasoning, dried
1/4 cup buttermilk
1 tablespoon butter
3 tablespoons olive oil
3/4 cup sour cream
1/4 cup mayonnaise
2 garlic cloves, minced
1/2 teaspoon red pepper flakes
1 tablespoon parsley, fresh chopped
1 teaspoon lemon juice, fresh squeezed
1 teaspoon lemon zest

Steps:

  • Make the sauce by mixing together all sauce ingredients. Season with salt and pepper to taste.
  • Whisk together Buttermilk and eggs in a shallow bowl.
  • In a separate shallow bowl, mix together flower, corn meal, salt, pepper, and italian seasoning blend.
  • Create a breading station using one hand for wet and another for dry ingredients. Dip each Zucchini Strip in the egg mixture and cover with the dry mixture. Shake off excess.
  • Heat Butter and Olive Oil in a large skillet over medium high heat. Fry the breaded zucchini in the pan. Cook on each side for approximately 2 minutes or until browned and crispy on each side. You may need to do this in batches depending on size of pan.
  • Serve family style with the dipping sauce.
