Okra Creole image

Suummer is the time for vegetables! This recipe is a showcase for all the wonderful flavors New Orleans is known for.

Number Of Ingredients 8

3 slice bacon
1 lb okra, sliced
14 1/2 oz can chopped tomatoes
1 c fresh corn kernels
1/2 c water
1 tsp creole seasoning
1/4 tsp pepper
hot cooked rice (optional)

Steps:

  • 1. Cook bacon in a dutch oven until crisp; remove bacon and drain on paper towels, reserving drippings. Crumble bacon and set aside.
  • 2. Cook okra and next 6 ingredients in hot drippings in dutch oven over medium heat, stirring occasionally, 6-8 minutes, just until vegetables start to tenderize. Reduce heat to low, cover and simmer 15 minutes or until vegetables are tender. Top with crumbled bacon. Serve over rice if desired.
