NUTTY CHICKEN image

Number Of Ingredients 11

1 1/2 tsps. cornstarch
2 tbsps. soy sauce
1/3 cup chicken broth
1 tsp. sugar
1/4 to 1/2 tsps. crushed red pepper
2 tbsps. vegetable oil
1 1/2 lbs. chicken breasts, skinned, boned, and cut into strips
3/4 tsps. minced gingerroot
1 green pepper, cut into 1 in. pieces
4 scallions, diagonally sliced into 1 in. pieces
2/3 cup dry roasted, unsalted peanuts

Steps:

  • Dissolve cornstarch in soy sauce. Mix together chicken broth, sugar, red pepper, and soy sauce/cornstarch. Set aside. Preheat oil in wok. Add chicken and ginger and stir fry until meat loses its pinkness. Remove meat from wok. Add green pepper and onions to wok and stir fry 2 mins. Add peanuts, stir fry 1 more min. Return meat to wok. Add chicken broth mixture and stir fry until mixture boils and thickens, about 1 min. Serves 2 or 3.
