Not Your Traditional Potato Salad image

Number Of Ingredients 12

1 units yam
3 units red potatoes
0.25 cups green bell pepper
0.25 cups sweet red pepper
0.5 cups onion
1 units dressing
3 tablespoons dijon mustard
3 tablespoons olive oil
0.25 teaspoons salt
0.25 teaspoons pepper
1 teaspoons dill weed
1 units lemon

Steps:

  • Microwave yam and potatoes (with skins on) for 10 - 15 minutes. When they are fully cooked cut into bite sized chunks.
  • Dice red pepper and green pepper. Mix together in a large bowl with onions. Make dressing and pour over salad.
  • Toss all together. Cover and refrigerate until chilled.
