Noodles Kuchen image

This is a dish I serve with Corned beef and colcannon on St Patties day. Recipe in comments below. It is sweet and different. it requires a overnight trip to the fridge before baking. This dish has lots of sugar, milk products and butter. It is amazing. But do not try to make it skinny as it will not be good. Either suck it up...

Number Of Ingredients 12

7 eggs
1 c sugar
16 oz cottage cheese
2 c sour cream
1 pkg egg noodles
2 c milk
2 tsp vanilla
topping below
2 tsp cinnamon
1/4 c crushed tostitos (or corn flakes)
1/4 c sugar
1/2 c 1 stick butter (not margarine)

Steps:

  • 1. Mix eggs and sugar. Add cottage cheese, sour cream, milk, and vanilla.
  • 2. In separate bowl, add butter to warm noodles, stirring until melted. Combine noodles with cottage cheese mixture.
  • 3. Pour into 9 x 13 glass pan. Refrigerate overnight.
  • 4. Preheat oven to 350. To make topping, combine tostitos (crushed), cinnamon, and sugar. Sprinkle over top.
  • 5. Bake 35-45 minutes. Let dish set for about 5 minutes before serving. Cut into squares and garnish with sour cream if desired.
