Super Cheesy Baked Velveeta Mac and Cheese image

This is one of my all time, most favorite dishes. As long as I can remember, my mom and grandma have fixed this recipe - and we always have it at Thanksgiving and Chrismas dinners (my hubby thinks that's weird, but what does he know? hehe). Number Of Ingredients 8

1 pkg 16oz elbow macaroni, cooked per package instructions and drained
3 Tbsp butter
3 Tbsp flour
4 c milk
1 1/2 lb velveeta cheese, cut into small cubes
salt and pepper to taste
1 sleeve of saltine crackers, crushed
3 Tbsp butter, melted

Steps:

  • 1. In saucepan, melt 2 Tbsp of butter. Add flour, combine well. Add milk and cheese, cooking over low-medium heat. Stir constantly, until cheese is fully melted and sauce is slightly thickened. Add salt and pepper and stir.
  • 2. Place cooked macaroni into a large baking dish. Pour cheese sauce over the noodles.
  • 3. In small saucepan, melt 3 Tbsp butter. Remove from heat. Pour in crushed saltine crackers and stir to cover crackers with butter.
  • 4. Sprinkle buttered crackers evenly over the top of the macaroni.
  • 5. Bake in 350 degree oven for about 25-30 minutes or until hot and bubbly and cracker crumbs are slightly browned.
