Yield 25 manicotti

MANICOTTI
4 large eggs
1 C. flour
1 C. milk
1 tsp salt
FILLING
1 1/2 lb. ricotta
3 eggs
1/2 C grated romano
parsley
1 tsp salt

Steps:

  • Mix ingredients for crepes. Use a little extra milk if needed to make a thin mixture. Use a small frying pan, 3" diameter; oil it, heat it, place a small amount of mixture in pan. Roll pan to make crepe. Rest aside on wax paper. Mix all ingredients for filling. Use 1 heaping tablespoon per shell. Pour some sauce in baking pan, place manicotti in single layer. Pour more sauce over. Sprinkle with cheese. Bake about 30 min. in 350 degree oven, covered. Can be frozen.
