2 cups flour
1 cup brown sugar
3/4 cup butter or margarine, softened (i like to use country crock plant butter made with almond oil for all of my baking. see photo.)
1/2 cup quick cooking oats
2/3 cup white sugar
3 tb cornstarch
1 1/4 cups water
3-3 1/2 cups peeled and cored baking apples, diced
1 tsp vanilla
1/2-1 tsp cinnamon (1 tsp will give you a deep cinnamon flavor.)
1/4 tsp allspice
1/8 tsp salt

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Combine the first four ingredients. Mix with your hands until crumbly. Measure out 1 cup of crumbs and set aside for topping. Pat the rest into the bottom and sides of a 9" deep dish pie plate. Depending on your baking dish, you may not need them all.
  • 3. In a large deep saucepan, whisk sugar, cornstarch, water and salt until smooth. Bring to a gentle boil. Then, cook for one minute until thickened. Remove from heat and add apples, vanilla, cinnamon and allspice. Combine gently and pour into crust.
  • 4. Top with reserved crumbs.
  • 5. Take a piece of aluminum foil and lay it flat on top of the pie. Bake at 350 degrees for 45-55 minutes until apples are tender and crust is golden.
