No-Bake Fresh Strawberry Cheesecake image

1-1/4 cups vanilla wafer crumbs
1/3 cup butter, melted
1/4 cup boiling water
1 env. (1/4 oz.) KNOX Unflavored Gelatine
2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 can (14 oz.) sweetened condensed milk
Juice from 1 lemon
2 cups coarsely chopped fresh strawberries
1/4 cup strawberry jelly
2 tsp. cold water
1 cup sliced fresh strawberries

Steps:

  • Combine wafer crumbs and butter; press onto bottom of 9-inch springform pan sprayed with cooking spray. Refrigerate until ready to use.
  • Add boiling water to gelatine; stir until completely dissolved. Beat cream cheese, condensed milk and lemon juice in large bowl with mixer until blended. Add dissolved gelatine and chopped strawberries; mix well.
  • Pour over crust.
  • Refrigerate 3 hours or until firm.
  • Microwave jelly and cold water in microwaveable bowl on HIGH 20 to 30 sec. or until jelly is softened; stir until blended. Cool slightly.
  • Run knife around rim of pan to loosen cheesecake; remove rim. Arrange sliced strawberries over cheesecake; brush with jelly mixture.
