NC Coleslaw image

If you are a fan of creamy coleslaw, you may not like this one. It is crisp, crunchy, and tart.

Number Of Ingredients 6

1/2 c apple cider vinegar
1/2 c sugar
1/2 c tomato puree
2 tsp salt
2 tsp pepper
1 cabbage head, grated

Steps:

  • 1. In a large mixing bowl, add grated cabbage.
  • 2. Combine vinegar, sugar, tomato puree, salt, and pepper into a small bowl.
  • 3. Add vinegar mixture to cabbage and toss until well-blended. (The mixture may look dry at first, but there's plenty of liquid to moisten cabbage thoroughly if you keep tossing.
  • 4. Refrigerate at least one hour before serving.
