My Kinda Caviar (Cowboy Caviar) - Table for Two® by Julie Wampler image

Salsa and beans had a baby and named it cowboy caviar! This deliciously flavorful salad is a great side dish for any party or barbecue!

Number Of Ingredients 13

1 pound Roma tomatoes, (seeded and diced)
1: 15- ounce can black-eyed peas, (rinsed and drained)
1: 15- ounce can black beans (rinsed and drained)
1 cup frozen sweet corn, (thawed)
1/2 cup diced red onion
1/2 cup diced green bell pepper
1/2 cup diced red bell pepper
1/2 cup olive oil
2 tablespoons granulated sugar
1/3 cup white vinegar
1 teaspoon chili powder
1 teaspoon kosher salt
Chopped parsley for topping, (optional)

Steps:

  • In a large bowl, add all the ingredients and then toss to incorporate.
  • To serve chilled, put covered in fridge for 3-4 hours. This can be served at room temperature, too.
