My Famous Carrot Cake image

Everyone who tries this says it's the best they've ever had---and it's VERY easy!!!

Number Of Ingredients 15

2 c all purpose flour
2 c white sugar
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
3 c shredded baby carrots (ready to eat baby carrots are sweeter)
1 c vegetable oil
4 large eggs
CREAM CHEESE FROSTING
3 oz cream cheese
1/4 c butter or margerine
2 c sifted powdered sugar
1 tsp vanilla
1/2 c chopped pecans or walnuts

Steps:

  • 1. Grease and flour 13x9 pan and preheat oven to 325.
  • 2. First: Cream together sugar, eggs, oil, vanilla, and carrots.
  • 3. Second: Add remaining dry ingredients, use sifter. Mix well for 2 minutes.
  • 4. Third: Pour into greased 13x9 pan at 325 for about 55 minutes, or until wooden toothpick inserted comes out clean.
  • 5. Beat together frosting ingrediants, EXCEPT NUTS, with handmixer (cream cheese and butter should be softened) SIFT POWDERED SUGAR. Frost cake when thoroughly cooled and sprinkle chopped nuts on top.
