MOOSEWOOD VEGETABLE SOUP image

2 Potatoes, cubed
1 Celery stalk, sliced
1 Carrot, sliced
1 C Onion, Chopped
1 C Peas, frozen
8 oz Mushrooms, sliced
1 clove Garlic, chopped
2 T Butter
1 T Olive Oil
1/2 t Marjoram
1/2 t Thyme
1/2 t Dill
1/2 t Basil
1 t Salt
4 C Chicken Stock
1 T Soy sauce
3/4 C White Wine

Steps:

  • Bring stock to a boil and add potatoes. In a fry pan saute mushrooms, carrots, celery, onion and garlic for 5 minutes. Add spices, saute 8-10 minutes. Add vegetables to stock and cook gently about 20 minutes. Add peas, wine and soy. Turn off burner and allow to sit for 5 minutes.
