Mom's Tamale Pie image

My mom used to make this and we thought it was divine, I have the recipe and of course I have to fiddle with it. It's a little different, just more spices and still very yummmmmo I'll add photo of baked tonight!!!

1/2 c corn meal
1/2 c masa harina or can use only corn meal
1 can(s) diced tomatoes
1 can(s) corn, or frozen
1/2 c corn oil
1/2 lb ground pork
3/4 lb hamburger
1 medium onion chopped
4 medium cloves garlic chopped fine
1 medium green pepper chopped
1/2 can(s) black olives sliced in half
1 Tbsp salt divided between burger and corn meal
1 Tbsp chile powder divided
3/4 Tbsp cumin powder
1 can(s) chicken broth

Steps:

  • 1. Put chopped onions, garlic, green pepper in skillet (I use cast iron) slightly cook til soft, then add ground beef and pork, add cumin and chile powder, stir til no pink showing. Cut your olives and add to this. Put this to the side in bowl.
  • 2. Now rinse skillet, add 1/2C oil, can chicken broth, masa and/or corn meal then stir in tomatoes, and corn. Add some chile powder, salt, cumin. Stir until it thickens, may have to add a bit of water.
  • 3. Remove corn meal/masa mix and wash skillet, grease pan pour in meat mixture them top with corn meal/masa mix. Place in 325 oven for 45 min covered.
