MOM'S LOCRIO DE POLLO image

8 boneless skinless chicken thighs
2 tbsp. mojo criollo
1 chopped onion
3 minced garlic cloves
2 tbsp. dried oregano
1/2 fresh chopped cilantro
2 tsp. capers
2 tbsp. olive oil
3 envelopes Sazon Goya w. achiote and culantro
4 cups uncooked rice
2 14 oz. caps stewed tomatos
1 32 oz. box of Swanson's chicken broth
Splash of whatever you're drinking :) - beer or white wine best...

Steps:

  • Marinade chicken for 20 minutes in ingredients listed up until capers. Heat oil in a caldero and brown chicken. Add rice, stir with chicken. Add tomatos and sazon. Simmer for 2 minutes. Add chicken broth, let simmer over medium heat until almost all liquid is absorbed /evaporated. Reduce heat to low and cover. Cook until rice is tender. Splash with what you're drinking to add a bit of steam of the rice hasn't opened.
