MOM'S LEMON ROAST POTATOES image

Number Of Ingredients 8

4 pounds baking potatoes (about 10)
1/2 cup lemon juice
1 cup water
1/3 cup olive oil
3 cloves garlic, minced
2 tsp salt
2 tsp oregano
2 tsp pepper

Steps:

  • - Pre-heat oven to 325 degrees - Peel potatoes and cut lengthwise into large wedges - Place in one layer in baking dish (13" x 9") - In bowl, combine remaining ingredients; pour over potatoes, coating evenly - Bake 2 hours, turning occasionally, until tender and all liquid is absorbed
