Steps:
- 1. For dressing, combine the cheese, lemon juice, garlic, anchovy paste, mustard, Worcestershire, salt and pepper and blend until smooth. Slowly add the olive oil, while continuing to mix. (prepare up to 1 week in advance). 2. For salad, use a vegetable peeler to slice cheese. (shave up to 1 day in advance). In a large bowl, combine cheese, lettuce, apple, onion, croutons and dressing. Serve immediately.
