MISSISSIPPI POTATOES image

I have made this dish for many years and everyone always raves about it. It's simple, easy and can be made the day or night before.

Number Of Ingredients 7

8 c potatoes (cooked and diced) i use red.
1 c mayonnaise
salt & pepper to taste
1 lb processed american cheese, diced
1/2 c chopped onion
4 - 6 slice bacon, fried
1/2 c green or black olives (i use black)

Steps:

  • 1. Toss potatoes with mayonnaise, salt, pepper, diced cheese and onion. Place mixture in a greased 9 x 13 inch pan. Sprinkle with crumbled bacon and olives. Bake at 325 degrees for 1 hour. Can be made ahead and frozen.
