Steps:
- 1. Combine 4c water and 4c ice cubes in large bowl; set aside. Boil 4qt water in large pot. Add peas and 1tbs salt. Cook until crisp about 2 min. Drain peas and then transfer to ice bath to cool completely. Remove from water and pat dry with kitchen towel. Cut peas in half crosswise 2. Whisk mint, shallot, leamon zest, juice, mustard, honey, and oil in large bowl. Add peas and cheese to bowl and toss to combine. Season with salt and pepper. Serve chilled or at room temp. (can be refrigerated for one day).
