MINT CHOCOLATE MACAROONS image

Yield 3 dozen

Number Of Ingredients 5

1 1/2 cups semi-sweet chocolate chips
1/4 tsp mint extract
3 egg whites
1/2 cup granulated sugar
2 1/2 cups of flaked coconut

Steps:

  • Melt chocolate chips over hot (not boiling) water, stirring until smooth, then add mint extract. Set aside. Preheat oven to 350 degrees. In a small mixer bowl, beat egg whites until foamy. Gradually add sugar; beat until stiff peaks form. Fold in melted chocolate and coconut. Drop by rounded tablespoons onto foil-lined cookie sheets. Bake 20 minutes or until set. Let Stand 5 minutes. Transfer to wire rack; cool completely.
