BLACK BEAN AND CILANTRO SALAD image

Number Of Ingredients 6

2 12 oz. cans black beans, low sodium, OR 3 c. dried black beans
1 red pepper, diced
2 ripe tomatoes, deseeded, chopped
1/2 c. cilantro, chopped
3 Tbsp lemon juice
3 Tbsp olive oil

Steps:

  • 1.) Combine ingredients in a bowl and let stand in refrigerator overnight. Serving size: 1/2 c. over 1 c. rice. Consider pairing w/ taco/fajita filling, or hummus for tasty wraps.
