Mint Chocolate Delights image

Number Of Ingredients 13

1 cup(s) unsalted butter, softened, divided
1/2 cup(s) sugar
1/3 cup(s) packed dark brown sugar
1/3 cup(s) semisweet chocolate chips, melted and slightly cooled
1 - egg
1/2 teaspoon(s) vanilla
1 1/2 cup(s) all purpose flour
1/4 cup(s) unsweetened cocoa powder
1/2 teaspoon(s) salt, divided
2 1/2 cup(s) powdered sugar
1/2 teaspoon(s) mint extract
3-4 - drops red food coloring
2-3 tablespoon(s) milk or half and half

Steps:

  • Beat 1/2 cup butter, sugar, and brown sugar in large bowl with electric mixer at medium speed until light and fluffy. Add melted chocolate, egg, and vanilla; beat until well blended. Whisk flour, cocoa, and 1/4 teaspoon salt in small bowl. Gradually add to butter mixture, beating well after each addition. Shape dough into 16 inch log. Wrap and refrigerate 1 hour or until firm.
  • Preheat oven to 400. Lightly grease or line cookie sheets with parchment paper. Cut log into 1/4 inch slices. Place 2 inches apart on prepared cookie sheets. Bake 10 minutes or until set. Cool on cookie sheets 5 minutes. Remove to wire racks; cool completely.
  • Beat powdered sugar, remaining 1/2 cup butter, and 1/4 teaspoon salt in large bowl with electric mixer at medium speed until well blended. Add mint extract and food coloring; beat until well blended. Beat in milk, 1 tablespoon at a time, until light and fluffy. Spread filling on flat sides of half of cookies; top with remaining cookies.
