Mini Pumpkin Pie Bites image

Sometimes a large piece of pie is just too much after a big meal. These little delectable bites are a perfect replacement. Also great for parties or potlucks.

2 pkg pillsbury ready-made pie crust dough
8 oz cream cheese, room temperature
1/2 c sugar
1 can(s) pumpkin puree
3 eggs
1 tsp vanilla extract
1 tsp ground cinnamon
1/2 tsp salt
1/2 tsp ground ginger
1$ tsp ground cloves

Steps:

  • 1. Preheat oven to 350 degrees F. Lightly grease mini muffin tin.
  • 2. Remove dough from package. Roll the pie dough slightly thinner.
  • 3. Use a circular cookie cutter to cut 12 circular shapes from each pie crust (24 total)....slightly larger than the mini muffin cups in the pan.
  • 4. Press the dough circulars into each cup in the mini muffin pan.
  • 5. In a small bowl, separate 1 egg white from egg yolk, reserving the egg white. Brush egg whites on the top edges of each pie dough.
  • 6. In a medium bowl, blend cream cheese, sugar, canned pumpkin, remaining 2 eggs, vanilla and seasonings together until thoroughly combined.
  • 7. Spoon mixture into each pie dough.
  • 8. Bake for 12-15 minutes.
  • 9. Remove from oven and cool on wire rack for 20 minutes.
  • 10. Carefully remove each mini pie bite, place on platter, serve, and enjoy!
