Apple Cider Vinegar Potato Chips image

These will fix your salty/cruncy cravings...and go great with your favorite sandwich too! Just be patient enough to let the potatoes hang out in the vinegar a couple of hours - it is worth it! I like the fact you know what's in them and they are fresh and crispy.

1 large russet potato, sliced thin with a mandoline
enough apple cider vinegar to cover potatoes
SEASONING MIX:
2 tsp salt
2 tsp sugar
1/2 tsp garlic powder

Steps:

  • 1. In a plastic bowl add potatoes and enough vinegar to cover them. Soak the potatoes for 2 hours.
  • 2. Heat deep fryer to 350 degrees. In a small bowl combine ingredients for spice mix.
  • 3. Dry potatoes thoroughly. Drop into hot oil a few at a time and cook until potatoes are crispy and golden about five minutes.
  • 4. Drain on paper towels and sprinkle immediately with seasoning mix. Toss to coat.
  • 5. Transfer to pan to cool. Repeat until all chips are cooked.
