Mini Pound Cakes image

From my Mamaw's recipe collection.

1 cup(s) unsalted butter, softened
3 cup(s) sugar
5 - eggs
1 cup(s) low fat vanilla flavored yogurt
1/4 cup(s) heavy whipping cream
1/2 teaspoon(s) vanilla
3 1/2 cup(s) cake flour
1/4 teaspoon(s) salt
1/4 teaspoon(s) baking soda

Steps:

  • Preheat oven to 300F. Spray 7 (6x3 inch) miniature loaf pans with nonstick baking spray with flour. Set aside. In a large bowl, beat butter at medium speed with an electric mixer until creamy. Add sugar, beating until fluffy, 3-4 minutes, stopping occasionally to scrape down sides of bowl. Add eggs, one at a time, beating well after each addition. Add yogurt, cream, and vanilla, beating until combined.
  • In a large bowl, sift together flour, salt, and baking soda. With mixer on low speed, gradually add flour mixture to butter mixture. Beat until combined. Divide batter evenly among prepared pans. Bake until a wooden pick inserted in center comes out clean, 35-45 minutes. Let cool in pans 10 minutes. Run a knife around edges of pan to loosen. Remove from pans, and let cool completely on wire racks.
